The Pioneer Woman's Soul Sweet 'Taters

There are two activities that I VERY much enjoy doing...browsing cookbooks (of course they have to have pictures!) and food blogs!  Food.  Yum.  What more can I say?

So you can fully understand why I have become obsessed with The Pioneer Woman's website.  It's amazing!  Not only does she post recipes, but she takes gorgeous pictures-- documenting the whole cooking process from start to finish!

This brings me to my first attempt at making a recipe from THE Pioneer Woman (Did I mention I saw her cookbook at Target this week and got really excited?!).  We had a Thanksgiving themed party at work today for Dana's Birthday and I decided to make sweet potatoes.  CLICK HERE for the recipe and pictures for these "Soul Sweet 'Taters" from the Pioneer Woman.

They were really easy to make, but I'm not sure my topping came out the way it was supposed to (hint, hint -- it didn't look like her pictures!).  I prepared the sweet potato mixture the night before and everything was going great.  The next morning I got up to make the topping and stick it in the oven.  I'm really not sure why, but my topping looked totally different than what it was supposed to look like.  I did use brown sugar instead of light brown sugar.  That's one difference.  The rest...I'm not sure.  Her's looks more appealing...a nice, crumby topping.  Mine looked more like poop, but all that matters is that is tasted good (I mean how can you go wrong when it is filled with sugar?!).  Everyone at work said they liked it, so I call it a success and would recommend making it has a Thanksgiving side dish (or dessert!).

I would have posted a picture of the final product, but I didn't bring my camera to work where it was consumed by my fellow hungry co-workers (and myself!).  :)

  3. Hi, I found your comment from PW and saw your pic. I think what may have gone wrong is that you didn't chop up the nuts. Try doing that next time, and the mixture will probably resemble crumbs. Hope that helps :)

  4. @Jen - Thanks so much...I will try that next time! I was being lazy and bought "chopped nuts", but I think they needed to be "chopped" a little better, lol.
